Roast level, tasting notes and grind, decoded. This works whatever's actually in the lineup right now, our roasts change every season, this guide doesn't need to.
01 · Roast level
Every bag we sell carries a roast label, from Light through to Dark. Roughly speaking, lighter roasts keep more of the bean's own character (brighter, more acidic, more "origin-y"), darker roasts trade that for body and a bolder, more roast-forward cup. Neither is stronger in caffeine, that comes down to the bean and how you brew it, not how dark it's been roasted.
Light
Floral, tea-like, delicate. Origin character front and centre.
Light-Medium
Still bright, but rounder. Stone fruit, honey, early chocolate.
Medium
The balanced middle ground. Chocolate, nutty, caramel-sweet.
Medium-Dark
Fuller body, lower acidity. Dark chocolate, toffee, a little smoke.
Dark
Bold and roast-forward, low acidity, heavy body. Built for milk.
02 · Reading the tasting meters
Every product page shows the same four meters. Here's what they're telling you:
Intensity
Overall punch, how loud the cup is on the palate.
Body
How heavy it feels in the mouth, thin and tea-like through to thick and syrupy.
Sweetness
Natural sweetness in the bean itself, before you add anything.
Acidity
Brightness and tang, not sourness. The zing that makes a cup feel alive.
03 · Choosing your grind
Beans
Whole bean, grind it fresh yourself. Best flavour, if you've got a grinder.
Espresso
Fine grind for espresso machines and moka pots.
For Pods
Ground for your own reusable, refillable pods. We don't send sealed pods.
Filter
Medium-coarse, for V60, Aeropress or a drip machine.
Cafetière
Coarse grind, for a French press.

Buying for someone else?
Flat white, strong and no-nonsense? Go dark. Into pour-over, or always ordering "whatever's interesting"? Go light. Somewhere in the middle, milky but not shy? Medium won't put a foot wrong. Check the roast label and the four meters on any current product page and you won't go far wrong.
